How can I get GM to display - e.g. by shading - terrain that's higher than a specified value?

Not sure how to change the shading but you can alter elevation values so it trims it.
Try right clicking the terrain layer -> Options -> Alter Elevation Values -> Set Minimum Valid Elevation to the height you want to cap the bottom to.
You can also Restore Default Elevation Range if this doesn't work.
