Clip Island within a raster

I need to clip an island in a raster using a polygon. This island will be filled using a cropped raster. I know how to crop a raster to a polygon, but can not figure out how to create an island using a polygon.

    Mike,

    First create an area for the outer bounds, then select the island area to cut out with the Digitizer Tool, then right-click and select to subtract/add that as an island to an area, then click in the outer area to add it as an island. Then select your outer boundary area (now with island) and do the export cropped to the selected area.
