What does the numbers in Mercat (WGS54) box in the bottom righthand corner next to Latitude and Longitude mean?

The status bar box to the left of the lat/lon readout are the current cursor coordinates in your current selected view projection. This is the projection selected on the Projection tab of the Configuration dialog.

In this software program are you able to find the distance between the center of the Earth to local sea level and then the distance from sea level to the present topography?

There is not currently a way to perform that operation in Global Mapper.
