How to create a south polar stereographic projection in GM

Hi. I'm having difficulty re-centering a map on the south pole. I started off with the north Polar Stereographic, which worked, but it seems to be the only option, with no equivalent projection for the south. I tried adjusting the parameters of the northern projection - assuming I could just recentre it, but none would work. The data is the Natural Earth bathymetry tiff (which also does not reproject in QGIS). Is there an option in Global Mapper for a southern polar stereographic, as I can't find one? Thanks for any help provided.

    I have just tried warping the projection in QGIS - with no success.
