Truncating water level flooding

Is there a way to truncate the water level flooding in a horizontal direction to simulate the area flooded behind a dam and not extending beyond the front of the dam?

Also is can I derive attributes from the surface (area flooded, volume of the lake), using the water level tool or should I use some other work flow?
